Solution:
1. Go to Xbox 360 Dashboard
2. Go to "System Settings" under 'My Xbox'
3. Now choose "Memory"
4. Highlight over your main HDD and press Y
5. Now choose "Clear System Cache"

Now boot up MW3 and you will be asked to re-download the update, confirm and hopefully you should be able to play lag free for now (I have had it happen to me a second time) until Infinity Ward release a patch!
