Neverinth is one of the best soulslikes (like Dark Souls) I've played. It's also a roguelite (roguelike with some progression). The game is unfortunately stuck in early access (possibly forever), but I'd still recommend it on sale or in a bundle. One thing I really like about the game is options for leveling up that go beyond Dark Souls and most soulslike games.

The game is available on PC and Nintendo Switch. The anime theme might turn some people off, but it really doesn't go beyond player character design so it's not very intrusive.
