Need for Speed II (and it's Special Edition) had a very interesting feature; hit a no-so-solid-looking barrier or misjudge a jump and you will find yourself careening off the track, losing time.

This kind of stuff didn't appear again until NFS Carbon in Canyon Duels/Drift; although in that game, falling off the track also meant losing the race.
