Here is the method I've been using to collect Tokens to buy everything from the shop. This method is viable since you can't get tokens from Arena, and getting 10 tokens from races is slower.

You want to go to Challenges and select "Keeping Up With the Bigheads". This challenge spawn you on a map with a row of 5 Tokens directly behind you. You want to drive behind, collect 5 Tokens and then let them respawn to get 10 Tokens. Then you want to crash into the wall to reset the challenge first. It is nice that your tokens get saved and you can keep doing it.
