Allsanities includes the following:
Keysanity - shuffles keys into the world
Shopsanity - shops will sell 4 random items on the left side
Scrubsanity - deku scrubs will sell random items
Songsanity - songs can be found in item spots instead of normal spots
Tokensanity - every golden skulltula/token is shuffled as well, the big one.
In addition, the Ocarina, Weird Egg, and Gerudo Card are shuffled into the mix as well.

So the only thing not shuffled in this is Master Quest dungeons - that I will do next time I do one of these.

They're a lot of fun. Did it all from memory without a checklist this time to test my game knowledge, it had uhhh interesting results. I discuss some of the spoiler log after I beat ganon if you're curious where some other items were.
