Oven-Baked Antojitos
Oven-baked antojitos are a delicious Mexican appetizer that can be easily made at home. Here's a simple recipe to make oven-baked antojitos:
Ingredients:
- 10-12 small corn tortillas
- 1 cup cooked and shredded chicken or beef (or a vegetarian alternative like beans or cheese)
- 1/2 cup salsa (your choice of mild, medium, or hot)
- 1/2 cup shredded cheese (cheddar, Monterey Jack, or a Mexican blend)
- 1/4 cup chopped fresh cilantro (optional)
- Sour cream, guacamole, or additional salsa for serving (optional)
Instructions:
1. Preheat your oven to 375Β°F (190Β°C).
2. Lay the corn tortillas on a baking sheet. If they are not pliable, you can heat them for a few seconds in a microwave or on a hot griddle to make them easier to work with.
3. Spread a spoonful of salsa onto each tortilla, leaving a small border around the edges.
4. Place a small amount of shredded chicken or beef (or your chosen filling) on top of the salsa on each tortilla.
5. Sprinkle shredded cheese over the filling. You can adjust the amount of cheese based on your preference.
6. Fold each tortilla in half, creating a half-moon shape, and press gently to seal the edges.
7. Bake the antojitos in the preheated oven for about 10-12 minutes or until the tortillas are crisp and golden brown.
8. Remove the antojitos from the oven and let them cool slightly before serving. Sprinkle chopped cilantro on top if desired.
9. Serve the oven-baked antojitos warm with sour cream, guacamole, or additional salsa on the side for dipping.
