Poonam’s chicken curry recipe

Ingredients

3 star anise
4 cloves
2 cinnamon sticks
4 cardamon pods
2tbsp veg oil
50g butter
2 finely chopped onions
2 finely chopped tomatoes
1 chopped tomato tin
1tbsp garlic finely chopped
2tbsp ginger finely chopped
4 tbsp green chillies finely chopped - according to heat (add extra chillies for biryani as the rice will mild the chillies)

2tbsp dhana jeera
1tbsp red chilli powder
1/4 tbsp turmeric (hardan)
1tbsp Garam masala
Salt according to taste
2 large potatoes cut into cubes
1 whole chicken / boneless cut in pieces
Handful of coriander roughly chopped

Method

1 - add oil, star anise, cloves, cinnamon sticks, cardamon pods in a large pot, cook for 2-3 mins on medium heat. take the star anise, cloves, cinnamon sticks, cardamon pods out.

2 - add onions, once onions a lightly golden add garlic and ginger cook for 1-2 mins until lightly golden

3 - add fresh tomatoes cook until softened, then add green chillies

4- add tinned tomato, salt, dhana jeeru, garam masala, turmeric & red chilli powder. Mix well and let it simmer for 2 minutes

5- add potatoes & chicken, let it cook on low to medium heat for 30 mins, cover and stir occasionally, add a little water if the sauce is too thick or is sticking to the bottom of the pan

6 - garnish with coriander and serve with rice. Enjoy
