I am Web Developer and from My Personal Experience with UltraWide Monitor I Will Say Go with UltraWide Monitor Because it is Wide and You Can Open 2 Full Windows Side By Side.
I Can Open Sublime Text on Left and Web Browser or Photoshop on Left Which Boost My Productivity.
UltraWide Monitor Gaming is Not Great Because Not All Games Support Ultrawide Gaming and Make Sure to Check the Games Out Which You Want to Play.
All Game on 2560 x 1080 Resolution Requires Extra 10% GPU Power Which Will Give You Less 10% FPS than Full HD 1920 x 1080.
I Will Say Every Web Developer Must Own a UltraWide Monitor for Web Developer and Programming.

I Really Don't Like Dual Monitor Set Up Due the Black Bar Appear.
