Strategy and tips:
Easy when you know how. The tightest bit is tiring Jerimiah out in time, but if you go full pelt in a big circle around the ranch as shown you should do it. Then feed him an apple - you should have one in your inventory from the start of the Epilogue. When taking Jack out, don't ask him to speed up more than twice. And if you got this far, you should be able to win a race versus a boy on a pony.
