Just something I messed around with while playing the recent PC release. The edges of the playable area are completely enclosed by invisible walls, which is normally as far as you'll be able to go, but there are some tricks to let you go through them. Two of the clips are from Undead Nightmare, but they're doable in the main game too, with a good enough horse.

0:00 Out of bounds (cactus, south of Escalera)
It's simple enough to get pushed past the invisible wall by dismounting between the wall and a cactus. There are other cacti on the way to that one that you can also wedge between, but I could never get them to push me through as reliably as this one.
2:35 Back in bounds
If you keep going east, hugging the south edge of the walkable terrain, you'll eventually have to make a jump to not get pushed through the invisible wall touching the corner, followed by another jump that I could never cross without being pushed to the other side of the invisible wall. This is all the way east, as the terrain might show, but this is as far as I got, the wall's just too close.
2:47 Out of bounds (horse, southwest of Gaptooth Breach)
Creating a mark on the invisible wall with a throwable is useful to help you see where exactly it is, though obviously unnecessary. Anyway, this is the second method I found, just find an invisible wall with an elevated surface nearby, position the horse parallel to the invisible wall and as close to it as possible, then jump at the horse's head/neck area. It may take a few tries, but it should eventually push you through. If you jump too close to the saddle, you'll end up landing on the horse instead. You can use the horse neck jumping for bypassing other walls too, but it's extremely unreliable unless you have a setup as ideal as this. The furthest east I got was up near Rathskeller Fort, where a similar invis-wall-ground-gap thing happens that I didn't bother trying to jump over.
5:10 Out of bounds (horse, east of Rathskeller Fork, north of Ridgewood Farm)
Done on the main game to prove these are possible outside of Undead Nightmare, this is on the horse you get right after the first mission. The furthest east I got from this point was up to the river separating Tall Trees and Hennigan's Stead, the river barely exists at the end of it, but it still drowns you if you try to pass it.
6:56 Falling off the map with horse
Since horses can't spawn here naturally even if you whistle, you have to use a cheat to spawn one. Falling off the edge on horseback usually despawns the horse and teleports you back to where you mounted it.

The invisible walls are one-way, meaning you can simply walk back to return to the playable area, after which the only problem you face is getting down without dying from the fall. The walls being one-way also means you can very easily accidentally walk out, which is very common in certain parts of the map.

After walking far enough out of bounds anywhere, you get to a point where the ground turns from actual walkable terrain into purely cosmetic and visibly lower quality terrain with no collision. If you fall into it, there's a high probability of getting stuck tumbling and ragdolling for several minutes, if not longer.
