Whether using a thermostatically controlled Griddle or pan, be sure to use high heat, the proper type and amount of oil, and season accordingly. Most importantly, let it sear. Be patient. Do not press down. Do not constantly flip. After a few minutes, flip once to sear opposite side. Then place in oven to finish it off - use a temperature probe for perfect results.
