Smoked Rib Sandwich on the Pellet Smoker

This smoked rib sandwich on the pellet smoker is made with baby back ribs, barbecue sauce, a combination of a few different barbecue rubs, and your favorite toppings. If you love the McRib sandwich from McDonald’s, then you’ve got to try this homemade smoked baby back rib sandwich!

Here are the steps for making a smoked rib sandwich on the grill:
- Start by removing the skin from the back side of a slab of ribs.
- Score the ribs on top of the bone. Just cut a slit down to the bone so that you can easily pull the bones out when the ribs are done smoking.
- Add a binder of your choice. We rubbed our baby back ribs with a mixture of yellow mustard and A-1 Sweet Hickory sauce.
- Season liberally with your favorite barbecue rub.
- Place the ribs on the smoker at 250 degrees F. Smoke for about 3 hours, spritzing every 30 minutes with a mixture of half apple cider vinegar and half apple juice concentrate.
- Remove the ribs from the smoker. Season again with your rub, add some sauce, and spritz again. Then, wrap the ribs in butcher paper, and put them back on the smoker for another 2 hours.
- When the ribs are done, unwrap them and pull out the bones. Then, season and sauce again, and put them back on the smoker carefully for about 15 minutes to allow the sauce to tack up a bit.
- Then, just buil your rib sandwich with your favorite toppings like sweet ’n spicy pickles, more barbecue sauce, sliced raw onion, mayo, etc.
