Thanks to incredible work by modder Archy, a tool now exists to decompile and recompile the game's common files, which are its heart and soul. You've seen me modify ships that were already created, but not create new ones or change how they work on a fundamental level. That's what common files are for, so I spent all day and way too long into the morning working on this beauty - a player version of the Sabaoth Frigate, complete with HUD, proper name, and both it and its turrets and friendly now!

People back in the day wanted to play as larger ships, well now it's kinda possible. Mix two-player into this, and it could get pretty interesting. All releases of both games can have these files modified, by the way, it's not just PS2 Jedi Starfighter.
