To conserve the momentum of the cat dive, scratch immediately after landing, then jump again. You can jump a couple times between dives without losing your speed. This can also be used to conserve the momentum of boost pads. Any character can do this trick, but using it with Peach is particularly useful due to her hovering ability which would normally be held back by her slow speed.
I forgot to mention a fairly important other use of this: You can pick up a powerup after using this technique without losing your momentum, which means you can carry over your speed into a tanuki glide to clear gaps that would normally be impassable.
