This is Tekken 3, a PS1 game running on the PS3 & PS2 via backwards compatibility. The PS3 is a phat model (MGS 80gb bundle) running at 720p with no enhancements set.
The PS2 is a slim model using a Retrotink2X Pro in 480p standard mode.

Both are using the same HD Retrovision component cables through an Elgato HD60s.

Please keep in mind that Youtube compression will usually degrade video fidelity somewhat as compared to in-person viewership.
