After numerous tries, I finally defeated the Kayran. This was pretty tough the first few times in, but here's a recording of what I finally could do after all of that "practice" to help out anyone else. This is one of the main quests in the first Chapter of the game and there are several things to do to get ready for it.

I also had made the Kayren Trap and have the Mongoose potion, but you don't have to use either one to beat this thing if you can work out the timing of its attacks and the use of Signs. This was done on Normal difficulty. Even then, I wasn't expecting it to be as rough as it was but it did make beating it much sweeter.
