Little Chef Azariah Makes Mozzarella-Style Sauce, Incredible Creamy Kale, and Berry Amazing Overnight Oats

Little Chef Azariah has been making Whole Plant Food recipes since he could stand, right after he took his first steps. He has loved to cook and help mama make meals ever since his first smoothie recipe!

Before he even existed, the little chef's mama was very sick. She had actually been suffering from chronic issues ever since she was a little tyke like him. In her twenties, she was very unwell with multiple issues and chronic debilitation that left her stuck in bed about fifty percent of the time, and still suffering the other fifty percent that she was able to function.

She had no idea how to cook, or even eat a vegetable. She lived off of takeout and could barely boil water. It was at this time she discovered a vegan lifestyle, and this led her to learn about whole foods and slowly begin to learn how to cook and eat healthily.

Pretty soon after this she became pregnant and was horrified because she couldn't even take care of herself at this point. In faith, she named their child "Azariah" which means "God-helps" and he sure did! Whole foods helped her to be well enough to take care of her son somewhat, with some extra help. When her son was 8 months old, she felt strongly led to go to True North Health Center to fast, and found herself healed through fasting and living a Whole Plant, SOS-free diet.

Now she is a healthy and whole for the first time ever in her life! She can take care of her son, and gets to learn to be a kid again along with him! They both love to share their passion for food together, and love to encourage other families to do the same! My husband and I like to say "if a one year old can do it, I can do it!" If this kid can do it, we promise you can figure it out too!

Recipes:

Berry Amazing Overnight Oats
8 Cups Rolled Oats
8 Cups Blended Peaches in 100% Juice (about 4 15 ounce cans)
8 Cups Frozen Berries (we like mixed blueberry, blackberry, and raspberry)
1 Tbsp Cinnamon

Blend peaches with their juice (or if you don't want the juice you can pour it out and use only the whole fruit, and blend with water instead).
Add this and all other ingredients to a big mixing bowl and mix together, then let sit overnight and eat off of this recipe all week long!

Mozzarella-Style Sauce (No Added Fat)
-Makes 4 Cups-

2 Cups Cooked Cauliflower (12-14 ounces)
1/2 Cup Cooked Gold Potato
1/2 Cup Water or Plant Milk
*1/3 Cup Rolled Oats
1/4 Cup Nutritional Yeast
2 Tbsp Lemon Juice
2 Tsp Apple Cider Vinegar
2 Tsp Onion Powder
1/2 Tsp Dried Basil
**2 Tbsp White Miso Paste (Optional)
**1 Tsp Bensons Table Tasty (Optional)
**1/2 Tsp Ume Plum Vinegar (Optional)

**The Miso and Bensons are optional depending on your dietary desires. Both act as salt replacements, and also provide a very nice depth of flavor as well. If you regularly consume salt, feel free to add it to taste, perhaps between a 1/2 tsp and 1 tsp. T
**Tapioca Flour will make the Cheesy sauce extra ooey-gooey and stretchy, and also will get quite thick in the fridge. If you are planning on using the sauce for something like quesadillas or if you are looking for a ticker, or cheesy consistency, then I suggest giving the tapioca flour a try. If wanted something extra ooey-gooey, leave out the rolled oats and add 1/2 cup Tapioca Flour.
*If you do not consume blended rolled oats, I suggest adding a whole cup of gold potato instead of just a half cup.

Crazy Incredible Creamy Kale
2 Bunches Kale
1/2 Cup Water
2 Tbls Minced Garlic (or double this is you love garlic)

1/3 Cup Mozzarella-Style Sauce
1/4 Cup Green Onions chopped small

Tear the Kale from the stems and rip into chewable-size pieces. Place in instant pot with the water and garlic. Set the Instant Pot to 0 minutes (yes, really 0 minutes).
If you do not have an instant pot, you can cook this in a pot on the stove too.
After the instant pot comes up to pressure (generally about 10 minutes later), release the pressure immediately and then open and add in the Mozzarella-Style Sauce and the chopped green onions. Stir well to get everything coated with the sauce well, and serve!

(For an even simpler recipe, you can buy your kale already torn and ready to be dumped in)
