Travis Browne's Delicious Bear Stew | Ronda's Quarantine Kitchen #StayHome #WithMe
Ronda's amazing sexy hunky strong and so wonderful husband Travis Browne hunted a black bear and then turned it into an incredibly delicious stew for the whole family. Full recipe below!
2 lbs bear meat or meat of choice (beef, venison) cubed
1 onion, chopped
1-2 carrots chopped
2 celery stalks chopped
3-4 cloves of garlic, diced
1 large sweet potato peeled and chopped into small cubes
1/4 cup flour or so to coat meat (see recipe)
2 tablespoons tomato paste
1/2 cup dry red wine
4 cups of beef stock
1/2 teaspoon dried thyme or to taste
2 dried bay leaves
2 tablespoons high heat cooking oil such as avocado or grapeseed oil
Salt and pepper
Heat oil in large dutch oven or soup pot.
Season meat with salt and pepper, add small batches of meat to heated pot and brown evenly, don’t overcrowd the pot. Remove browned meat to bowl.
Add carrot, celery and onion to the pot, cook about 4 mins, stir occasionally, add salt and pepper to taste.
Add garlic and stir frequently for a minute until garlic is fragrant.
Add flour to vegetables and stir frequently until no raw flour can be seen, add tomato paste and continue to stir frequently until veggies, flour and tomato paste are well blended and lightly browned.
Stir in wine and scrape pan well to get any browned bits off the bottom and sides.
Stir in beef stock, bay leaves and thyme, gentle drop in meat. Bring to boil, then reduce heat and simmer for one to two hours depending on size of cubed meat.
If using bear meat it’s important that the meat is fully cooked, similar to using pork.
Once meat is cooked and tender, add sweet potatoes and simmer until sweet potatoes and tender, usually 20 mins depending on size of potato cubes.
Salt and pepper to taste.
