Load Rocket League, set it to borderless or windowed and then exit. now open '~/.local/share/Rocket League/TAGame/Config/Linux-TASystemSettings.ini' in your preferred text editor and change the 'ResX' value to the total resolution width of your combined screens. then save, and close.

Launch rocket league, enjoy 3 screen glory!
