0Normally winning against the Stella the Witch is not possible (it's called an unwinnable boss battle).
Stella the Witch also scales to your current level, so level grinding is futule
But with Maiden's skill mastered, you can survive the otherwise fatal 2nd Dark Orb attack. You can also use some long swords or spears to drain HP through their mystery skill, ot use potions restore HP. Equip accessory armor that increase max HP or speed helps.
If you somehow win... well, the cutscene afterward is same as with losing (the expected outcome). It's more like you didn't beat the witch, you merely survived her magic onslaught.
