You can pause Windows 10 updates, both feature updates and security updates simply by changing a couple of settings in the Windows Update section of the Settings App.

Feature Updates (the bi-annual updates that add or improve features in Windows) can be delayed for an entire year. So if you're not worried about getting the new features, change it to the number of days you want it delayed.

Pausing Security Updates works exactly the same, but it's limit is only 30 days.

So if you are someone who wants releases out in the general public for awhile before you get them, then Windows 10 Pro gives you the opportunity to wait. Within limits.
