You can build 7 different item combinations onto Vi, without any critical chance build and you can still do really well (I've tried it myself, easy top 3). However, I'll still make an argument for why full crit chance build

Here it goes.
I haven't tried this item combination a lot, BUT, in theory it makes sense. Here is what i mean: Vi is a frontline carry, and she deals almost all of her damage with her spell.

This means, it's important she critically strikes (everytime a champion is dependent on their spell for their damage, crit chance is very important). She needs to be tanky because she is Melee carry, and the only tanky item that gives crit chance is Steadfast (20%), add Infinity Edge for the spell crit (35%), now you're at 80% crit chance, and then finally one last glove item to get 100% crit chance.

So you can choose Hand of Justice/Quicksilver/Last Whisper or Guardbreaker. Hand of Justice is not a must because Mosher already gives healing, but I prefer the extra healing anyways for survivability, because most of the times you can get armor penetration with Evenshroud on SETT/Poppy OR late-game Yorick spell (has armor reduction) OR last whisper on Urgot (who deals AOE damage, so he can apply it to 3 targets at the same time). So you don't really need last whisper on Vi. But a strong argument can be made for quicksilver, melee units often have a problem with getting stunned etc.

ADVANCED: an advanced idea is, when a unit does most their damage NOT through basic attacks, but through spell, THEN, they don't really need quicksilver as much. Example: Vi and Yone both deal most damage through spell, while Riven and Olaf deal most of their damage with basic attacks, if you don't have quicksilver or CC-immunity on Olaf or Riven, it's basically unplayable. But Yone can get away with it, because even if he is stunned, he is still charging mana from being attacked, and his spell will go off sooner or later after the stun is off. He doesn't lose my value from being stun.
