M. Bison serves as one of two sub-bosses in this game, along with Geese, who fight in a unholy alliance as a tag-team against the player's chosen characters. Unlockable bosses in this game, I feel, give incentive to the player to keep playing for characters who are otherwise quite typical to their other incarnations, but are all the more satisfying to use given the effort which goes into acquiring them.
Bison here plays like his more exagerrated version from Street Fighter Alpha. He has a charge projectile, with Psycho Crusher as a lvl 1 super move, and even his Final Bison Psycho Crusher as a lvl 2 super move. He has scissor kicks as always, and that incredibly useful combination of Head Press and Skull Diver, which is significantly easier to use on opponents compared to its version in Street Fighter II. He's quite a typical interpretation of Bison's playstyle from Alpha 3, but here that seems to work with the overall presentation and theme of the game, which is generally more light-hearted. He is, essentially, just a regular version of Bison, but it is that unlockable status that makes him so satisfying to play as, and indeed aids my point that unlockable characters are a huge benefit to a fighting game.
