A lot of custom mobs don't reach their potential in maps because people don't realize some of the amazing tags you can use. Here they use:

Invulnerable - Stops mob taking damage.
NoAI - Mob cannot think for itself.
DeathLootTable:"" - Mob does not drop items.
Glowing - Mob glows
PersistenceRequired - Mob does not despawn
Silent - Mob does not make noise.
CustomName:"" - Mob has a custom name.
