If it is a map with choke points go for chinese
hand cannoneers + grenadiers + bombards
hand cannoneers will take care of incoming cavalry.
grenadiers will take care of mass infantry units.
Bombards will snipe the magonels or nest of bees that tries to counter.

If it is an open map without any choke points
e.g. king of the hill, high view
then go for mongols, they can tower rush or horsemen rush
