Assassin's Creed Odyssey is an action role-playing video game played from a third-person perspective. At the start of the game, the player can choose to play as Alexios or Kassandra, a Greek mercenary and descendant of the Spartan king Leonidas I. In addition to completing the story campaign, the player can freely explore the large open world set in Greece on foot or on horseback. As players explore the world, they will come across various non-playable characters (NPCs) that give players side missions to complete. They also find interesting locations, clear forts and camps, explore tombs and shipwrecks, and collect treasures. Sync points at various landmarks in Greece, which serve as fast travel points, can also be unlocked. Players can also collect various crafting resources, such as iron ore, wood, leather, metals, and precious gems, through exploration and wildlife hunting. Other side activities that players can engage in include competing in the gladiator arena and completing time-limited contracts and bounties.

While the main campaign mission follows the mercenaries as they reunite their families and stop the Cosmos Sect, additional quest lines task players with defeating the mystical creatures of Atlantis and defeating the cult. As the game is set during the Peloponnesian War, Athens and Sparta control different parts of Greece. An area can be weakened if the player kills the leader of their country, defeats members of their army, burns armor, or plunders their country's chest. When a territory is weakened, players can join the battle of conquest to help the attacking or defending side. Winning battles will give players valuable loot and equipment. Joining an assault team is a more challenging experience but will offer more gameplay benefits. Bounties are placed on player characters if they commit crimes such as stealing or hurting innocent people in public. NPCs called Mercenaries would then come to hunt down the player character, who could kill mercenaries, pay bounties, or kill the characters who gave them gifts. Each area has a recommended level. Players can be easily defeated if they venture into an area too early. However, the difficulty level of the game is adjusted to the level of the player. While interacting with other NPCs, players can choose from a variety of dialogue options, including the option to develop romantic relationships with some of them. At key moments of the game's campaign, players make important decisions that can affect the course of the story and lead to several different endings.
