Barrier Crushs have nothing to do with the barrier meters under the health of a character but with the meter in the top middle of the screen.

The easiest way to get this achievement is using two profiles. Player 1 (you) should use a controller and player 2 (no one) uses the keyboard, in an regular versus match. Just pick two characters you want and start with player 2 holding down back the whole time to block, while player 1 attacks over and over again, so you just beat his shield. The meter on top of the screen fills red and if its full you will break his shield, so just keep attacking while the second profile is blocking. You should be able to preforme the two 5 Barrier Crushs in 2 Rounds.
