Generally it is possible to game on a server CPU. They generally are exactly the same architecture but have minor differences that make them more suitable for server and workstation workloads. They can be ordered with more cores (currently the highest core count server chip is AMD’s 32 Core Epyc), typically have more cache, and support ECC memory. None of those features are all that helpful for gaming (though with high end consumer CPUs now offering up to 18 cores perhaps more games will try to utilize them). Gamers generally are better served by a CPU with fast individual cores than a lot of cores.
There are some circumstances where you may want a server CPU. If you have a consumer motherboard which shares a socket with a server motherboard it can be a cheap way to upgrade as used server chips are very cheap (brand new chips on the other hand can be thousands of dollars). You might have other uses for your gaming system than just playing games like video editing, 3D rendering, or running lots of virtual machines that benefit from a server processor. It may generally make more sense to have a single computer that’s suitable for both your work and gaming than to have a dedicated high end gaming PC.
