Saucepan Scalloped Potatoes with steamed broccoli

Scalloped potatoes are a classic autumn dish, and the combination of sweet potatoes and tender Yukon Gold potatoes makes our saucepan-style, plant-based version perfect for your holiday table.
Ingredients
FOR THE “CHEESY” SAUCE
8 oz fresh or frozen cauliflower florets (≈2 cups)
11⁄4 cups low-sodium vegetable broth
8 oz Yukon Gold potatoes
scrubbed & cut into large dice
1⁄2 yellow onion
chopped (≈1⁄2 cup)
2 cloves garlic
1⁄2 cup unflavored plant milk
1⁄4 teaspoon ground turmeric
sea salt
freshly ground black pepper
FOR THE SCALLOPED POTATOES
12 oz Yukon Gold potatoes
scrubbed & sliced
2 sweet potatoes
scrubbed & thinly sliced (≈1 lb)
1 yellow onion
chopped (≈1 cup)
1⁄4 cup raw, unsalted cashews
(optional) chopped
2 scallions
(white & green parts) thinly sliced (≈1⁄2 cup)
FOR THE STEAMED BROCCOLI
1 lb fresh or frozen broccoli florets
1 teaspoon fresh lemon juice
freshly ground black pepper
Get Ready
1. PREPARE “CHEESY” SAUCE
Combine cauliflower, vegetable broth, potatoes, onions, and garlic in a saucepan over high heat. Bring to a boil; reduce heat to low, cover, and simmer until very tender, 15 to 20 minutes. Remove from heat and let cool slightly (do not drain). Transfer mixture to a blender . Add plant milk and turmeric; puree until very smooth. Season with salt and pepper. Taste and adjust seasoning.
2. MAKE SCALLOPED POTATOES
Meanwhile, combine potatoes, sweet potatoes, onions, and enough water to cover them in a saucepan. Cover and bring to a boil. Reduce heat to low, and simmer until potatoes are tender, 10 to 12 minutes. Drain.
3. STEAM BROCCOLI
Steam broccoli in a steamer insert set over boiling water, covered, until tender when pierced with a fork, about 5 minutes. Remove from heat and transfer to a bowl to cool. Season with black pepper and lemon juice.
4. ASSEMBLE & SERVE
Bring it Together
Sprinkle with cashews and scallions. Serve with steamed broccoli.
