Here's few tips to help you with this boss if you don't want to use one shot build:
Change the difficulty to expert, for me the i-Frame in normal/easy makes the character locked in animation for too damn long. I mean since you're going to die a lot anyway why bother with lower diff.
Watch the button guide on the left, if the button blinking when you press parry/dodge button it does mean you are not locked in animation after you parry one hit or you're in good timing and rhythm. If it didn't blink then you're basically over. Don't try to do the aerial attack (RT) after jumping during Simon slam combo, you can still do that but the next attack is going to be hard to parry.
If Verso said "Maximum Damage", it does mean your next attack with roulette is going to be 200% so go all in. Do the gradient attack if you have the charge or anything, just don't do base attack.
