Everything you need to know about how to cook Highland Calamari - the razorfish fried in batter.

1. Find a beach
2. Check the tide timetables, lowest tides are best.
3. Bring a bag, preferably one that lets water seep through. I use an Asda PP Woven bag for life
4. Bring a container (or 2) of cheap table salt
5. Collect razorfish
6. Take a look around the shore and enjoy your surroundings
7. Take razors home and clean the shells.
8. Boil for 30 seconds then leave to cool
9. Clean them if you wish. Some people remove the black bits and some remove the heel. I eat the whole thing, but that's how I was brought up.
10. Coat in batter and breadcrumbs then fry for 30 seconds. Batter from a pack in the Co-op and Ruskoline breadcrumbs. Nothing fancy!
11. Allow to cool down then everyone tuck in. Garlic mayo is a nice accompaniment.
