If anyone come across crashes when fighting with Anchor Boss, Just Follow these Steps :
Disable Fullscreen Optimizations in shortcut properties, run in Dx 11 with Vista Service Pack 2 Compatibility mode, 540p Render Resolution with Windowed Mode, Sound and Vsync/Gsync Off
If that doesn't work then as a last resort in game settings turn on One Hit Kill and Kill the Anchor Boss
