Ingredients:

For the filling:

1 lb (450g) ground lamb or beef ... beef is better tasting
1 onion, chopped
2 carrots, diced
2 cloves of garlic, minced
1 cup frozen peas
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce (for added taste)
1 cup beef or vegetable broth
1 teaspoon dried thyme and dill (to add taste)
Salt and pepper to taste
For the mashed potatoes:

2 large potatoes, peeled and cut into chunks
1/2 cup heavy cream
3 tablespoons butter
1 egg
Salt and pepper to taste
Instructions:

Preheat your oven to 400°F (204°C).

Start by making the filling. Heat a large skillet or frying pan over medium heat and add the ground lamb or beef. Cook until browned and crumbled. Remove any excess fat if needed.

Add the chopped onion, diced carrots, and minced garlic to the pan. Sauté for about 5 minutes until the vegetables start to soften.

Stir in the frozen peas, tomato paste, Worcestershire sauce, beef or vegetable broth, dried thyme, salt, and pepper. Simmer the mixture for about 10 minutes until the liquid reduces and thickens slightly. Remove from heat.

While the filling is simmering, cook the potatoes. Place the potato chunks in a large pot and cover them with water. Bring to a boil and cook until the potatoes are tender when pierced with a fork, usually about 15-20 minutes.

Drain the cooked potatoes and return them to the pot. Add the heavy cream and butter, egg, and season with salt and pepper. Mash the potatoes until smooth and creamy.

Transfer the filling mixture to a baking dish or casserole dish. Spread the mashed potatoes evenly over the top, smoothing them with a spatula.

Place the dish in the preheated oven and bake for about 30 minutes, or until the filling is bubbling and the mashed potatoes turn golden brown.

(I added some sharp cheddar cheese to mine as well)

Once cooked, remove the shepherd's pie from the oven and let it cool for a few minutes before serving.
