Jokes aside, the developers intended for the clock to disappear when you destroy the red satellites, and this does function correctly if you shoot them. However, there's an oversight where crashing into them does not cause the clock to disappear. You lose 25% health each time, but there are enough health crates (you have to directly shoot the crates, not the balloon) to have the health to destroy all 9 of them. You can also completely destroy the large blue satellites without the clock disappearing. So destroy two of them and damage the third as much as possible (they take 40 hits, and you get 1 Wumpa Fruit per hit so it is easy to track).
Also, you don't have to keep killing the enemies like I did here, however it helps a lot with survivability since they like to crash into you and shoot a lot, losing a lot of precious health. Just make sure to not hit the red satellites, clock, or normal crates near the clock.
