With the witch summon this boss is the easiest in the game by far. Without it it's still fairly easy as all the boss has are 3 projectile attacks. She can't do very much otherwise and after a while she becomes tired and lands to eat the shrubs. If you have magic or arrows (you should there's a longbow close by) you can still attack her while she's in the air. Otherwise you simply have to wait until she lands. The fight is completely optional as the only things she guards are a divine ember which is helpful but not required and the watchtower key which let's you fight Havel if you didn't have the master key.
