Difficulty depends drastically on when you fight him. This fight is before Quelaag.
Stray Demon has the same moveset as Asylum demon while also having some magic explosions mixed in (this is why you want the crest shield) and the boss can shred your HP.
That being said there's a way to make things easier in this fight... just don't lock on. Unlocked you can get a better view of what attack stray is preparing and you have full movement and easier escape than you would otherwise.
That being said this fight takes a long time without an +10 weapon or something with demon slaying so try to get a black knight weapon.
