Well, this is the best I'm able to do at present :/ I find it difficult to emulate coin-op techniques on this version, hence the wide racing line on the big hairpin. My arcade record was 2'55.1 so at least this is a little faster.

Team Demolition X from Singapore have confirmed physic differences between the original Daytona USA coin-op and the updated Sega Racing Classic (which the LIVE/PSN versions are based on). However they stated good sub 42 laps are possible on SRC so technically they can be done on the LIVE/PSN versions too. Bear in mind though both Daytona and SRC in the arcade have superior controls (when the cabinets actually work!).
