Ingredients
3 cups chilled Cashew nut, powder, काजू
For Sugar Syrup
¾ cup Water, पानी
11/2 cup Sugar, चीनी
½ tsp Cardamom powder, इलायची पाउडर
3 cups prepared cashew powder, काजू
2 tsp Ghee, घी
Few Saffron strands, केसर
For Garnish
Silver vark, चांदी का वर्ख
few saffron strands
Process
In a small mixer jar, add cashews, grind to smooth powder. keep aside.
Now, sieve the ground cashew powder.
For Sugar Syrup
Now in a deep non stick pan, add water, sugar, cardamom powder.
Keep the flame on low and keep on stirring to form syrup.
Stir the sugar syrup till it forms string consistency.
Now, add the sieve cashew powder into the sugar syrup.
Mix it well till it starts releasing from the pan.
Once the cashew paste turns to dough, leave the pan and add ghee.
Continue to mix till the ghee melts completely and cashew dough is formed leaving the pan.
Switch off the flame. and grease the butter paper or a plate with ghee.
Transfer the cashew dough onto the butter paper or plate
Grease your hand with little ghee and knead for 30 seconds.
Once you get smooth dough, cover with butter paper.
Take a tray and press to form a uniform layer. Spread some saffron strands.
Then roll the dough with a rolling-pin, adjusting the thickness according to your choice.
Now, cut the dough into diamond shape or the shape you wish for.
Garnish it with saffron or rose petals.
