Doom: The Vanilla+ Experience
When I mentioned I mostly play Vanilla+ Doom nowadays, this is what I meant.
No mouse look, no crosshair, no jumping and no crouching. Always using the appropiate Compatibility Level for the map pack for the closest experience to Vanilla (some maps break otherwise) while retaining the visual flare of modern mods.
For Vanguard, that's compatmode 7 (MBF Strict) on GZDoom and complevel 11 (MBF) on PrBoom.
I use SSG Launcher as my WAD manager of choice, but feel free to use whatever you prefer.

Mods used (in order of load priority in SSG Launcher):
PerK Hi-res Doom sfx - HD versions of the original Doom sound effects.

Sound Caulking - Ever noticed how some monsters share sounds with others? This fixes it using Doom 64 and Doom 3 sounds.

Vanguard (put whatever map pack you prefer here).

Nightfright's Fullscreen Statusbar - Maintains the feel of the original HUD while giving you moee screen space to work with.

OR
MortalHUD Tweaked Version - Sleeker HUD, I use it for WADs that don't work well with Nightfright's HUD.

PerK Smooth Weapons Enhanced - Adds more animation frames to the weapons (Don't use it if the map pack adds new weapons or changes the existing ones).

Universal Weapon Sway - Adds a bit of sway to the weapons when you move the camera.
https://forum.zdoom.org/viewtopic.php?f=43&t=68255
Smooth Fluids - Makes the animations for water, lava, blood and toxic sludge look smoother by adding more animation frames. Some map packs don't work well with it (Back to Saturn X, for example), so your mileage may vary.

Revised Splashes - Adds splashes to water, lava, blood and toxic sludge when something collides with them.

Colored Blood - Makes Cacodemons bleed blue and Hell Knights/Barons bleed green like their death animations suggest.

Nashgore - More blood and gibs!

Also huge shoutout to Dwars for his excellent guide on how to make GZDoom look like Crispy Doom (and by extension, Vanilla Doom)!
I use his lighting and texture settings to make Doom look more like it's supposed to, but you can skip the resolution scaling part if you don't want the game to be too chunky on bigger screens.
