Note: This playthrough uses a relatively recently discovered patch, which disables the auto lock-on system that normally locks the player onto the first enemy they hit with a normal attack, making it impossible to turn afterwards. (see here https://www.youtube.com/watch?v=qHUzuyzu1k4)

Meng Huo's main offense is C6 and Musou, both being 360-degree AoE blasts. (C6 and last hit of Musou cause KO screams.)
C3 isn't very useful but it does look funny now that you can turn it.
C4 is a terrible bodyslam with an awkward hitbox, and crazy recovery time. Similarly to that, the jump attack also has a weird hitbox.
Also his movement speed is terrible, so using horses is pretty much a necessity.

Nanman Campaign is the same stage as Zhurong had, except you can skip defeating Sun Shangxiang.

Cheng Du has a few ambushes in the forest, and at one point your allies can get confused and become enemies, as well. Like before, I avoided it on purpose, but pausing while inside the forest still lets you view all the officers on the map without any restrictions.

At Chang Ban Liu Bei starts running away either after Zhang Fei is defeated, or if you turn left at the start of the stage and go that way towards Guan Yu. Conveniently, there are soldiers in Liu Bei's so he can't run away that quickly.
Approaching Zhuge Liang here triggers a massive ambush — easily the best place to get 1000KO on the new XL stages if you so desire. I did it to show it off, and it also gave plenty of points to the bodyguards for more defense upgrades.

Wu Territory is a linear stage. The closed gate only opens after Lu Xun is defeated, so you're forced to go that way first, and then backtrack to fight Gan Ning, Taishi Ci, and finally Zhuge Liang. There's plenty of archers to watch out for in the last section, so it's best not to rush ahead alone.

Yi Ling has a fire attack like always, and this time it tries to fake you out with the enemy reinforcements. The first group spawns in the upper-left corner, and not long after Lu Xun spawns on the boat near his usual location in the regular version of Yi Ling, and naturally Lu Xun is the one who causes the fire attack.
Zhuge Liang will spawn at the edge of the maze after the fire attack succeeds or fails.

He Fei Castle has a unique item for avoiding the main gate ambush and defeating Zhuge Liang first. This does result in having to deal with the archer ambush, as well as all the other enemies in the courtyard.
Archers only fire when they have a direct line of sight based on the map layout, so being behind a corner is a good way to stop them from firing. Even if they can technically see you since the bridges have no walls, they will not shoot across the terrain that you can't walk on.

Ru Nan is a final showdown with Zhuge Liang, Sima Yi, and Zhou Yu being the commander.
Sima Yi has the old boulder trick, and Zhou Yu has fire crossbowmen on his side (I think the only time these appear?), and approaching Zhuge Liang has the surprise of him calling in Lü Bu, but unfortunately allied troops can trigger this as well, so it wasn't much of a surprise at all.
Besides that, Cao Cao and Xu Chu's group was much harder to deal with. Having allied soldiers around for distracting the enemy makes a huge difference.

And yes, the story is a flip-around of how Zhuge Liang beats Meng Huo seven times in the novel, stretched out into seven stages. Except Zhuge Liang just fucking dies at the end rather than surrender.
