Falco is pretty good at three stocking The Showdown. Giga Bowser is easy pillar bait, and you can juggle him all day with u-tilt. Falco's fair is normally a terrible move outside against floaties, but it's pretty great here against Giga Bowser, where it's your best option out of a shine on him at very low damages, being able to rack up 30+% in damage, and damages Giga Bowser enough to make bairs fully safe on him. Fire Bird is also a great move here, where besides its use in helping Falco escape being cornered, it works well offensively, dealing enough base knockback to knock Giga Bowser well into the air at 0% (where it can then be used to setup juggles on him), and it can be easily utilised as a vertical killer at high damages to finish off juggles. Falco overall has the means to assault and kill Giga Bowser safely and quickly, and to easily escape pressure, making Falco among the top tier at the Giga Bowser stage.

Now once Giga Bowser is dead, Falco is a bit weaker at the 2 on 1, though once you get Ganon and Mewtwo over 50%, you can just jump above and dair them all day. If you're not that good with Falco and the 2 on 1 is too much, you can simply run to other side, shoot lasers, Fire Bird through them as they get near, and repeat. If you have the tech skill, you could probably just shine and pillar them across the stage with ease.
