Findings:
-No matter that position your target is in or what kind of animation they're doing at the moment, Assassinate will jump on top of them and stick onto them until they're stabbed.
-Non-Combat NPCs (including vendors and Moogles) and Minions have this invisible box around them that the Ninja will jump onto to stab.
-Chocobos and certain interactables can be Assassinated.
-You can Assassinate random players and other than the /gpose camera next to your name, they shouldn't be the wiser. So if you're one of those people that follow around a streamer and they happen to be in an area where you can use Assassinate... Assassinate them! XD
