A solution to this is to weaken the Straight, Hooks, and Uppercuts of your boxer. Set them all to 10 skill points each and you won't knock out the opponent too quickly. You'll be able to keep punching the other boxer in the face for quite a while and you'll finally see cuts and bruises. You can still knock them out by accident with a well placed counterpunch even at your weakened state, but by that time they should have enough satisfying facial damage and bleeding.
