Okay so here's how to setup the FFXV benchmark to run in any custom resolution.

Create a shortcut of the FFXV.exe, then go into the properties of this shortcut and edit the target section.

What to put in the target, copy paste the whole thing:
--graphicsIni config\GraphicsConfig_BenchmarkHigh.ini -f --displayResolution 3440 1440 --renderingResolution 3440 1440 --locale=en
