Catching this one isn't easy, but i'll try to summarize it for you.

For convenience, remember to make a save near the spot, so you don't have to cross half-map to get there each time you fail (I failed a lot, it did come handy).

This is the 3rd mission for Albert Mason (in the first one, you retrieve his bag, and in the second you kill 5 wolves - recommended to sleep at a hotel so skip time / do missions in between). Once you get to the 3rd one, it goes like this:

As soon as you shout at the horses, turn on eagle eye, look the MFT's trail, and press track.

keep filling up the bar, if it goes to 0, you have to track it again.

Make sure the bar is full, or nearly full, when you get back to Albert, this is important.

Skip the second cutscene (preferably with the bar still full, since it'll deplete during the cutscene.

As soon as the cutscene ends, press Caps lock to turn eagle eye back on, thus filling up the bar.

Then, all you gotta do is rinse and repeat (keep filling the bar up) while chasing the trail.

When you spot the horse, ride alongside it for a bit, until you see the promp to jump onto its back. then you just tame it like a normal wild horse.

And Voilá, you got yourself a new horse! make sure you bond it to at least lvl 1 (some treats will do the trick, and do not dismount until you reach a stable, otherwise you won't be able to mount it again - the workaround i found was to save the game and reload it - after getting it to lvl 1 bonding.
