This recipe is very difficult to get right and I would very much recommend using flour instead of straight up potato starch to make these noodles. I tried to keep it as close as possible to the original but man, it was a lot of effort for not the best reward.
Recipe:
## Potato Udon
- 1000g steamed Russet Potato, skin on
- 350g Potato starch
- 25g All purpose flour
- Salt
- 50ML Water
## Broth
- 1500ML Water
- 4ea dried Shitake mushrooms
- 1 piece Konbu, 4 inches
- 200g grated potato, skin off
- Salt/Pepper to taste
- 30ML light soy sauce
- 30ML mirin
