Here is an GISH Githyanki Build Guide for in Baldur's Gate 3. A Gish is a Githyanki fighter/wizard combination and the fighter subclass that works well is the Eldritch Knight. I would recommend finding a throwing weapon and not just using the longsword like I did in the video, that will make the damage much higher. This build uses a couple of your stats to be able to cast its spells and cantrips, intelligence and strength for your weapon attacks. This is not as strong as a spell blade like the build guide I released on that, but it still is a pretty decent mix. The wizard spells you can add bring a lot of versatility
