remember that I am using VRR, meaning the TV should run at around 80hz in the "120hz" Framerate Mode and at a high variable refresh rate in the "120hz" Graphics Mode.

The "120hz" Graphics Mode switches between frame doubling and frame tripling. this means the TV can jump from 120hz to 80hz, to below 80hz and everything in-between. This can explain the very different results of both tests I showed in that mode. depending on where your TV's refresh is at any given moment your Input Latency will vary between something close to the 60hz Framerate Mode and something close to the 60hz Graphics mode.
