More messing around with cheat engine and I found the addresses for the current gear for single race, and championship race. If you use cheat engine keybind feature you can make 0ms manual gear changes.

Add these address as type BYTE:

Current car gear (Single Race): 0x21FBEC96
Current car gear (Championship Race): 0x21FBDC52

I bound them to my xbox controller where the normal gear change buttons are and changed the in game gear change buttons to use other buttons so you don't get double gear changes. Car has to be in manual for best experience.
