Seriously speaking, don't feel too bad about steamrolling this fight. The boss' gimmick is having high defenses but very, very low HP. In other words: you're expected to use characters with piercing attacks here. Your easiest options here are Utsuho and Eiki (they both have piercing attacks that also target Grandgon's weakness to MYS and SPI), though they're far from your only choices. IIRC there's also the Eientei crew, Rumia and Iku if you need piercing attacks (the Eientei have a passive where 1 MP is expended to give their attacks piercing properties, Rumia has her Dark Side of the Moon skill and Iku has passives that cause her normal attack to ignore up to 80% of a target's defenses).

There are slightly more challenging alternate strategies to this fight: one is brute forcing the bosses defenses. As an example, Gambler Yuugi with 86K ATK, full buffs and a Herb of Awakening, can actually do about 500K to the boss, potentially more with Last Fortress boosted. Another strategy is using a poison strategy with Wriggle. Since you won't be killing the boss in two turns with these strategies, you actually have to contend with Grandgon's relatively strong attacks.

All of that said, if you are struggling to do this boss the "fair" way, I would just recommend using Utsuho. There's no reason to spend so long on this fight when the boss is, by design, intended to be a very minor roadblock in Plus Disk.
